Falafel with hummus recipe

Several restaurants serve falafel as a Lebanese food in India, but actually, it is Levantine cuisine which not only belongs to Lebanon but other eastern Mediterranean countries.

The main ingredients of falafel are chickpeas, fava beans, and parsley, but since fava beans are not easily available in India, I have prepared it using only chickpeas along with other essential ingredients. This is the fried version, but if you want it to be healthy, you can either go for shallow frying or baking. The strong flavor of falafel goes well with subtle and nutty taste hummus sauce.

For Tahini sauce recipe:

Tahini dip

Ingredients:

1/2 cup Sesame seeds(hull or un-hull)

1/4 cup olive oil

Salt to taste.

Preparation method:

Dry roast sesame seeds in a skillet and let it cook for 5 minutes or till it releases aroma.

Turn down the flame and let it cool completely.

Transfer Sesame seeds in to mixing bowl and grind it by gradually adding olive oil to it till it gets a paste-like consistency.

Tahini sauce

For hummus preparation:

Ingredients:

1 cup of boiled chickpeas

4 tsp of tahini sauce

14-15 cloves garlic

1 piece lemon

Salt to taste

1/2 tsp of Pepper powder

1 tsp of olive oil.

Preparation method:

Mix all ingredients such as Chickpeas, Tahini sauce, lemon juice, garlic cloves, pepper powder, olive oil and salt to taste.

Blend it by gradually adding water to make a puree like consistency.

For falafel recipe

Ingredients:

2 cup of boiled chick peas

1 big onion

5-6 garlic cloves

1 cup chopped parsley

1 cup chopped cilantro

2 tsp of chili flakes

1 tsp of cumin powder

1/2 cup bread crumbs

1/2 slice lemon

Salt to taste

Pepper powder to taste.

Preparation method:

Take boiled chickpeas in an electric food chopper and blend it. If chopper is small, then do it in small batches.

Transfer all mashed chickpeas in the electric chopper and add chopped onion, garlic, chopped cilantro, chopped parsley and bread crumbs to it.

Squeeze lemon, add pepper, chili flakes, cumin powder, salt as per your taste and blend till the mixture comes together and doesn’t fall apart while making balls.

Transfer it into a bowl again and make equal size of balls.

(If the mixture is dry and doesn’t hold together, add mixing once again in processor adding little water. Mine also got dry, so I mixed it again using water and little wheat flour to it)

Put oil in a deep pan and let it heat at low temperature. When it reaches the frying temperature, transfer falafel balls or patties into the oil and fry till it gets brownish crust on it.

Serve it with freshly homemade hummus.

You can also make falafel wrap with falafel, pocket bread, hummus and vegetable salsa.
