Mexican Tacos from scratch

This taco recipe is made in my style and not in an authentic way. I have tried to make it from scratch that is from tortillas to everything regarding filings like salsa sauce, kidney beans, and vegetables.

Serves: 3

For tortilla preparation


2 cup corn flour

1 cup wheat flour

Salt to taste

Warm water

Preparation method:

Take corn flour and wheat flour in a bowl.

Add salt to taste and mix well.`

Start kneading the dough by slowly pouring warm water to it till the dough becomes non-sticky and soft. The consistency should be such that when you make balls for rolling, it should not have cracks in it.

Let it rest for half an hour.

Roll tortillas after you prepare rest of the things.

Take one ball of tortilla dough, dust the floor and flatten it using a rolling pin to make flat round bread.

Transfer it to the pan and let it cook from both sides till some spots are visible on it. Let it cool down.

For salsa sauce preparation:

5 large size tomatoes

2 medium size onions

1 bulb of peeled garlic

9-10 jalapeños

2 tsp of chili flakes

3 tsp of olive oil

1 and 1/2 cup boiled kidney beans

Preparation method:

Place little oil in a pan and let it heat at low flame.

Then add roughly chopped garlic and saute it continuously to avoid burning.

After cooking for 1 min, add chili flakes to it and give a stir.

Add sliced or chopped onion to it and cook till it softens and becomes transparent.

Once onions turn transparent, add chopped tomatoes, salt to taste and let it cook around 30 min till tomatoes get soft and meshy.

Transfer the mixture into a mixing bowl. Add 9-10 jalapeños and blend it to get the smooth puree like consistency.

Take out one small bowl of sauce and keep it aside and transfer rest of the sauce back to the pan.

Add 1 and 1/2 cup boiled kidney beans to it, mix well and cook it for 5 min till everything comes together properly.

Keep it aside and start preparation for vegetable filling.

Vegetable filling for tacos:


1/4 part of each Yellow, red, and green bell pepper

3-4 leaves of Lettuce

1/4 part of each Yellow and Green zucchini

Red cabbage(optional)

1 medium sized Onion

2 teaspoon of Olives

7-8 Jalapeños

1/2 piece lemon

Olive oil


Pepper powder

Preparation method:

Slice all vegetables, add olive oil, lemon, pepper powder, Italian mix herbs to it and give a toss.

Final preparation: Tacos assemble

Assemble tacos by placing beans at the bottom of the tortilla. Then place a spoon of sauce on it.

On top of it place vegetable and grate mozzarella cheese as per your taste.

Fold tortillas from both side and enjoy.
