Vegetable quesadillas from scratch

The healthy and yummy quesadillas made from scratch. It is easy and quick to make with readily available ingredients. Tortillas are made with a mixture of corn and wheat flour, whereas filling is full of vegetables with very less amount of cheese. You can enjoy it with salsa dip but tastes good without it too and a good option for kids.

Ingredients for Tortillas

1 cup Corn flour

1 cup wheat flour

Salt to taste

Water as per requirement.

Ingredients for quesadillas filling

2/3 cup onion

2/3 cup green bell pepper

1/2 cup tomatoes

1/2 cup red bell pepper

1/2 cup yellow bell pepper

1/3 cup corn

4-5 garlic cloves

6-7 slice jalapeños

9-10 slice olives

1 tbsp chilli flakes

3 tsp of oil

Pepper as per taste

Mixed herbs as per taste

Salt as per taste

Preparation method for filling

Place oil in a skillet and let it heat at low flame.

Then add chili flakes, mixed herb, garlic to it and sauté it for a minute.

Next, add diced onions to it, stir it and cook it till it turns slightly transparent.

Then add all rest vegetables such as red, green, yellow bell pepper, tomatoes, and corn to it.

Sprinkle salt, pepper as per taste and sauté it well. Cover the lid and let it cook for around 10 minutes or till all vegetables are slightly cooked and soften.

Once vegetables are done, transfer it into a bowl and give a final touch by adding Jalapeños and olives to it. Let it cool down.

Final assemble of quesadillas.

Mozzarella cheese as per your taste. (You can also use cheddar cheese or combination of both).

Prepration method:

Take a flat pan and let it heat at low flame.

Place one tortilla in a pan and add some grated cheese on the half portion of the tortilla. The cheese will start melting.

On top of the melted cheese, spread vegetable filling in a proper amount to fill up the half portion.

Again layer the vegetable with cheese and fold the half portion of tortilla on it.

Cook both sides properly, till their surface turns into crispy brown color.

Serve hot quesadillas with salsa sauce or without it.
