Lemon Zucchini Pasta/Lemony Courgette

A few days back, I was scrolling through the TV and I came across Jamie Oliver’s food show. After switching channels, I finally settled on that and watched all three recipes that he made. One of the recipes was Lemony Courgette, which I have named as Lemon Mint Zucchini Pasta. I tried with no plans to put it here, but it was worth tasting and sharing with you all. It tastes amazing; not spicy, but flavorful with the freshness of mint, Lemon zest, and Lemon juice. I loved it, you too try out once. Thanks Jamie Oliver for giving me one more pasta recipe in my list.

Serves: 1

Lemony courgette.

Ingredients:

1/4th portion of 500 gm Spaghetti packet

14-15 or bunch of Mint leaves

1 tbsp Lemon Zest

1 large lemon juice

1/4 cup of yellow zucchini

1/4 cup of green zucchini

1/2 tbsp chili flakes

Parmesan cheese as per your taste.

2 tbsp Olive oil.

Preparation method:

Chop both types of zucchini into thin juliennes and keep it aside for a while.

Take a pan with 1 tbsp of olive oil in it and let it heat at low flame.

Add chili flakes and after giving a little toss, add both types of Zucchini to it.

Sprinkle some salt and let it cook for around 3 minutes with an intermediate tossing.

Later add lemon zest, roughly hand chopped mint leaves and let their flavor infused into the above mixture for a few minutes with a continuous stirring.

By this time, your pasta will be cooked, so directly transfer pasta to the Zucchini pan after draining water.

Squeeze a lemon, add parmesan, toss it and sprinkle salt-pepper to it as per the taste.

Grate more parmesan and drizzle olive oil before munching this delicious Lemon Zucchini pasta.
