Lemon Rice Recipe
Lemon rice also known as Chitranna in Kannada is the most loved breakfast from South Indian cuisine. It is lemony in flavor with the taste of ginger. The addition of peanuts and Bengal gram gives dish a crunch and amazing taste. Moreover tempering of mustard seeds, curry leaves and a little more amount of asafetida gives the dish unique flavor. It can be enjoyed with Sambhar, coconut chutney and if not simply enjoy with plain curd. It tastes yum.

Ingredients
1 cup rice
1/3 cup chana dal
1/4 cup of peanuts or a handful of peanuts
Small piece ginger
2 green chili
2 dried red chili
7-8 curry leaves
1 teaspoon mustard seeds
1/4 teaspoon of asafetida
2 lemon
1/2 turmeric powder
Salt to taste
2 tbsp of ghee or oil as per your preference.
Preparation method:
Take uncooked rice in a big bowl, wash and soak it in water for 30 min.
Take one small bowl and soak chana dal(Bengal gram lentils) in water for at least 15 minutes.
After 1/2 hr, take 3/4 water in a pot, add salt to it and parboiled it. It should not be sticky.

Once rice is done, drain extra water and let it cool down.
Take a pan, place three teaspoons of clarified butter(ghee) and let it heat at low flame.
For tempering, add mustard seeds, asafetida, curry leaves, and dry chili to it and sauté.
Then add soaked lentils and peanuts to it. Cover the lid and cook it for 3 mins or till it softens.
Once chana dal and peanuts are done, add crushed ginger, green chili and turmeric powder to it and sauté.

Now take boiled rice bowl, add lemon to it and salt in case if you have added less while boiling.

Mix and add it to the above mixture in the pan.
