Mix Vegetable Paneer Sabji

This is the first time, I am posting North-Indian recipe. Though north cuisine is considered as rich and heavy, this Mix Vegetable Paneer Sabji is prepared using a minimum amount of oil. Moreover, hung curd is used instead of cream for garnishing. It also contains protein-rich vegetables such as green peas, yellow, red, green bell pepper, and cottage cheese. It is sweet-spicy and can be enjoyed with Paratha or Jeera rice.

Mix vegetable paneer sabji

Ingredients

For Gravy Preparation:

1 cup diced onions

1 cup + 3/4 cup diced tomatoes

10-12 soaked cashew nuts

1/2 tsp chili powder

1 tsp coriander powder

1/2 tsp garam masala

For Sabji:

2/3 cup chopped onion

1 tbsp of garlic+ginger+green chili paste ( 10-12 garlic gloves, small piece of ginger, 1 big green chili)

2/3 cup green peas

1/2 cup green bell pepper

1/2 cup yellow bell pepper

1/2 cup red bell pepper

200 gm Paneer(cottage cheese)

2 tbsp clarified butter(ghee) + 1 tbsp oil(optional).

1/2 tsp cumin seeds

Asafoetida

Whole spices( 1 piece cinnamon, 3 green cardamom, 4-5 cloves, 2 star anise, 5-6 pepper, 2-3 bay leaves, 2 black cardamom)

1 tsp chili powder

1 tsp coriander powder

1/2 tsp garam masala

1/2 tsp Pav Bhaji masala

1 tbsp Kasturi methi (Dried fenugreek leaves)

Water as needed

Preparation method:

Blend cashew nuts in the blender.

Add onions to the same mixing bowl and grind it.

Lastly, place tomatoes, chili, coriander, garam masala powder to it and blend it well till it turns into the even coarse paste.

Chop all vegetables and get ready with all ingredients required for preparing sabji.

Place oil in a skillet and let it heat at low flame.

Add cumin seeds, asafoetida, spices and sauté it well.

Adding ginger+garlic+chili paste, stir it for 1 minute and transfer onions to it.

Sauté and cook till it turns transparent. Add peas, sprinkle a little salt, cover the lid and cook for around 5 minutes.

Later, add all three bell peppers and post stirring, cover the lid and cook for another 5 minutes.

Put chili powder, coriander powder, garam masala, kasturi methi, pav bhaji masala to it and stir well.

Putting some water and stirring, cook till veggies are almost done.

Transfer the onion-tomato gravy to it, mix them well and simmer for 5-7 minutes.

Add pieces of paneer and again cook for 3-5 minutes.

Add hung curd as a garnish.
