Kothimbir Vadi Recipe

Kothimbir Vadi is one of the popular, tasty and healthy dishes from Maharashtrian cuisine. Made with Bengal gram and Maize flour along with coriander makes this dish very healthy. Moreover, it is steamed and not fried, so everyone including those on diet can definitely add it into their diet chart. It is made in an authentic way with help of my Maharashtrian maid Sunita tai. Fresh coriander, garlic, and spicy chili give it a refreshing taste. This delicious Kothimbir Vadi recipe takes very less time and is quite easy to make.

Kothimbir Vadi

Ingredients:

1 and 1/2 cup bengal gram flour

1 cup maize flour

2 cup chopped coriander(Use with soft stems)

10-12 garlic clove

2 green chili (I used the spicy one)

1 tsp turmeric powder

1 tsp red chili powder

1 tsp roasted cumin powder(jeera)

1/2 tsp carom seeds(ajwain)

2 tbsp oil

Around 1 cup water

Preparation Method:

Take Bengal gram, maize flour in a large bowl and add green chili+garlic paste to it.

To the same mixture, add cumin powder, red chili powder, carom seeds, turmeric powder and mix it well.

Then add chopped coriander, salt to taste and toss them well.

Gradually add water and keep on mixing with spoon or hand till it turns to sticky dough.

Take a flat surface and spread little oil on to it.

Place a small batch of dough on oil and flatten it with your hands.

Make a roll of it by rolling from one side. Repeat the same process for rest of the dough.

Transfer all rolls into the steamer and allow it cook for around 10 minutes at full flame. You can also check inserting a knife into it. If it comes clear, it is done.

Once it is cooked, remove it from the steamer, let it cool completely and cut into equal pieces.

You can have as it is or can stir fry it further to make it crispy.

For tempering, take a pan with 2 tsp of oil in it.

Add mustard seeds, asafoetida, curry leaves, sesame seeds and let it splutter.

Later add all steamed Kothimbir vadi to it and roast it till it gets red from both the sides.

Enjoy hot Kothimbir Vadi with Curd or Tea.
