Protein Packed Kidney Bean Salad

Protein-packed, vitamins loaded, minerals rich and anti-oxidants laden; Everything in one salad bowl. This colorful and nutrients stuffed salad is the best choice for weight control, tasty yet very satiating and filling. It contains Kidney beans, cottage cheese and varied colors of vegetables with Olive oil, Lemon and Honey based salad dressing.

Kidney beans salad

Ingredients for Salad Dressing

1 lemon or 2 tbsp lemon

1 tbsp extra virgin olive oil

1 tbsp honey

1 tsp chili flakes

1/2 tsp black salt

1/3 tsp black pepper

Rock Salt to taste

Preparation Method:

Take all the mentioned ingredients in a small bowl, mix it well and put it aside.

Ingredients for Salad

2 cups boiled Kidney beans

2/3 cup onions

2/3 cup tomatoes

1/3 cup cucumber

1/3 cup green bell pepper

1/3 cup yellow bell pepper

1/3 cup red bell pepper

1/4 cup boiled broccoli or 5-6 florets.

1/4 cup cottage cheese(Paneer)

Coriander for garnishing

Preparation method:

Take Kidney beans (Rajma) in a pressure cooker and wash it twice with clean water.

Then add 3 cup of fresh drinking water and putting on the flame, let it come to boil.

Once it starts boiling, switch off the flame and covering the pressure cooker lid, let them soak for 4-5 hours.

After the resting period, add 1/2 tsp of salt and cook them at the middle flame till 5-6 whistles. It may vary for different pressure cooker.

Drain water from it and transfer to the salad bowl.

To it, add diced vegetables, paneer and mix them well.

Over it, pour salad dressing, coriander for garnishing and sprinkle salt if required.

Give a toss and enjoy sour and sweet salad.
