Vegetable Dalia Khichdi Recipe

A healthy Vegetable Dalia Khichdi recipe made using cracked wheat instead of rice. It is a good option for the people on a diet to enjoy healthy, yet spicy and very tasty. If you are wondering it is the same as the Dalia upma then no, spices and flavors are stronger in this recipe. You can add as much as vegetables of your choice to give it a more healthy twist.

Ingredients:

1 and 1/2 cup raw cracked wheat/Dalia

1/2 cup sliced onions

1/2 cup sliced potatoes

1/4 cup green bell pepper

1/4 cup red bell pepper

1/4 cup yellow bell pepper

1 tbsp garlic ginger paste

1 tsp turmeric powder

1 tsp chili powder

1 and 1/2 tsp coriander powder

1/2 tsp Pav bhaji masala

1/2 tsp garam masala

2 tbsp oil

1/2 tsp cumin seeds

Pinch of asafetida

Neem leaves

9-10 raw peanuts

Salt as per taste

Water as per requirement.

Preparation method:

Take cracked wheat/Daliya in a bowl, wash with the water and soak it in the clean drinking water for around 30 minutes to 1 hour.

By the time, Daliya is kept for resting, get ready with vegetables and Garlic-Ginger paste.

After soaking, place a pressure cooker with oil in it on a low flame. Add cumin seeds, neem leaves, peanuts, asafetida to it and sauté well.

Further transfer sliced onions and let it cook till it get slightly soft and transparent with a continuous stirring.

Add ginger+garlic paste and keep stirring to avoid sticking to the bottom.

Once onions are wilted, add all veggies, sprinkle a dash of salt, give a toss and cook for 5 minutes covering the lid.

Then add turmeric, chili, coriander, Pav Bhaji masala, and Garam masala powder and mix them well.

Transfer soaked dalia/cracked wheat into the above mixture and fold it well with spices.

Add 2 and 1/2 to 3 cup of water, mix well, cover the lid and pressure cook till one whistle at a medium flame.

If your soaking period is less, then you may also need to cook till 2 whistle. Moreover, different cooker takes different time, so go as per your intuition and judgement.

If you feel that it is not cooked yet, don’t panic. Add a little water and let it cook covering the lid without pressure cooking.

The hot, spicy and very healthy Dalia/cracked wheat khichdi is ready to enjoy with buttermilk or curd.
