Veg Seekh Kebab

Almost every restaurant in India has varieties of Kebabs on their menu. Kebab is generally a meat dish cooked on the skewer originated from Middle-eastern region. But as a vegetarian, I tried to make veg kebabs in the healthiest way. This vegetable Kebab recipe is made with several nutritious elements such as cottage cheese/Paneer, Sweet potato, carrot, coriander and cauliflower along with other spices. It was delectable, spicy and yet extremely healthy. Moreover, the recipe is less time consuming, serves best as an appetizer if you are hosting a party.

Serves: 6-7 piece.

Veg Seekh kebab

Ingredients

1/3 cup Cauliflower

1/3 cup Carrot

1/3 cup Mashed sweet potato

1/3 cup Cottage cheese/Paneer

1/4 cup Coriander

1/4 cup Gram flour

1 tsp Ginger

1/2 tbsp Green chili

1 tsp red chilli powder

1/2 tsp Turmeric powder

1/2 tsp Coriander powder

1/2 tsp Garam masala

1 tbsp dried fenugreek leaves(Kasturi Methi)

Preparation method

Place 2 tsp of oil in a pan, add cumin seeds, asafetida and let it splutter.

Later add finely chopped carrots and cauliflower to it. Sprinkle salt and sauté it well.

Let vegetables cook with intermittent stirring till it gets soften. No need to overcook it.

In a large bowl, take a mashed sweet potato, Paneer/cottage cheese, finely chopped ginger, and green chili.

Once carrots and cauliflower are done, transfer to the above bowl and add Gram flour, finely chopped coriander to it.

Next add all spices like red chili, coriander, turmeric, garam masala powder and dried fenugreek leaves(Kasturi methi).

Sprinkle salt as per the taste and mix the mixture with your hands till it comes together as a soft dough.

Take a portion of dough and skewer it by pressing it from all sides to spread it even.

Dry roast on a pan or directly on the flame by continuously revolving it changing the sides.

Veg Seekh kebab

It tastes well with coriander and mint chutney.
