Paneer Bhurji is the best alternative to Egg Bhurji for Vegetarian people. It is loaded with protein and vitamins prepared using several vegetables and Paneer/Cottage cheese. With no extra oil or butter, this Paneer Bhurji recipe is even ideal after weight training workout. Healthy and satiating, it is quick and simple to make.

250 gm Paneer/Cottage cheese.
2/3 cup onion
3//4 cup tomatoes
1/3 cup green bell pepper
1/3 cup red bell pepper
1/3 cup yellow bell pepper
1 tbsp garlic+ginger paste/ 8-9 clove garlic+small piece of ginger
2 green chili
1 and 1/2 tsp red chili powder
1/2 tsp turmeric powder
1 tsp coriander powder
1/2 tsp garam masala
1/2 tsp mango dried powder(amchur)
1 tbsp oil
Hot the skillet with oil in it.
Put cumin seeds, let it splutter and sprinkle asafetida in it.
Then add garlic, ginger and chili paste to it. Sauté it, add onions and keep stirring till onions turn transparent.
Further add three types of bell pepper, stir it and let it cook for 2 minutes with or without lid.
Once it is half done, add tomatoes. Mix it and again cook it for 3-4 minutes till tomatoes shrink a little.
Later put spices; turmeric powder, chili powder, garam masala, coriander powder, sauté it well and let it cook till oil gets separated on the sides of the skillet.
Finally, add Paneer/Cottage cheese, sprinkle salt to taste, mango dried powder, stir well and cook till Paneer heats uniformly.
Enjoy hot spicy Paneer Burji along with roti, bhakhri or bread.
