Egg Curry Recipe
This egg curry recipe is spicy and flavorful made using onions, tomatoes, garlic, ginger, hot green chilis, and spices. It is quick and simple to make with regular ingredients, so no need for special preparation, and can be made in an instant. There would be varying egg curry preparations across different regions, here is my way. This recipe is quite spicy, but you can use regular chilies instead of hot dark green chilies to reduce its hotness.

Ingredients
3 boiled eggs
1 cup tomato
3/4 cup onions
14-16 garlic cloves
1 inch size ginger
2 green hot chilies
2 tbsp oil or butter
1 tsp red chili powder
1 and 1/2 tsp coriander powder
1/2 tsp turmeric powder
1 tsp egg curry masala
Salt as per taste
Ginger juliennes for garnishing
Coriander for garnishing
Egg curry preparation method:

Take oil in a pan and let it heat.
To it, add garlic, ginger, green chili paste and sauté it till its rawness goes.

Next, add onions, stir it and cook till it softens and turns transparent.

Once onions are cooked well, add tomatoes and sprinkle a dash of salt to it. Mix and let it cook for around 2-3 minutes with the covered lid.

Then put spices, red chili, coriander, turmeric, and egg curry masala powder to it.

Stir well and cook till tomatoes turn mushy and oil separates from sides.

Add water as per requirement and 2 egg yolk to it. Mash mixture with a masher, adjust the salt, and bring the mixture to boil.

Lastly, add boiled eggs into the curry.

Note: You can even stir fry eggs before leaving into the curry. Just toss them into a little amount of oil. I used plain boiled eggs.
Garnish it with ginger juliennes and coriander. Your hot and spicy egg curry is ready. Have it with bread, pav, roti, or rice as per your choice.
