Multi-flour spicy paratha(Thalipeeth).

Today’s dish actual name is Thalipeeth, which is a Maharashtrian traditional food. This recipe is made using  5 different cereal flours, thus makes it a fibre-packed food. It tastes better when made spicy.  In the traditional way, this paratha is made with hand by patting. But for ease, I made a dough in such a way that it can be rolled easily using rolling pin.

Thalipeeth(Multiflour paratha)

Serves: 3

Ingredients:

1/2 cup Wheat flour

1/2 cup Gram flour

1/2 cup Rice flour

1/3 cup Bajra flour(millet)

1 cup Jowar flour(sorghum)

1 Medium sized chopped onion

1cup chopped green onion

1/4 cup chopped coriander

10-12 cloves garlic

Small piece ginger

4-5 chillies(add as per your requirement)

1/2 teaspoon Ajwain(carom seeds)

1/3 teaspoon Cumin powder

1/2 teaspoon Chili powder

1/2 teaspoon Turmeric powder

1/3 teaspoon Coriander powder

1/4 teaspoon Indian garam masala

2 teaspoon Sesame seeds

2 teaspoon oil

Pinch of asafoetida

Salt to the taste

Water for making a dough

Preparation method:

Take a bowl and put all 5 flour into it. Then add carom seeds, sesame seeds, cumin powder, asafetida, chilli, turmeric, coriander and Garam masala powder to it.

Make a paste of garlic, ginger, green chilli with a pinch of salt using mortar-pestle and add to the mixture.

Then add chopped onion, green onion, and coriander to it.

Mix it well and add salt to the taste.

Put oil into it and knead a dough with water.

Make equal balls of dough, flattened it, toss it with flour and roll with rolling pin to make round paratha.

Transfer it to the pan, and roast it using ghee or oil at medium flame. You can make crisp as per your requirement.
