I think there is always a debate on whether the granola bars are good for health or not. The answer to it is no, if you eat a readymade market available bar and yes, if you make at home. If you see ingredients of market available energy bars, then you will find that many of the brands add different types of artificial ingredients, which are for sure not good for health.
This granola bar or energy bar is made of jaggery without addition of sugar. It is made with all healthy ingredients such as rolled oats, varieties of nuts and seeds, dates and raisins. My 3-year kid like it so much. It is very easy and quick to make.
Prep time: 15 min
Cook time: 10 min
Serves: 10 bars
Granola Bar Ingredients:
2 cups rolled oats
1/3 cup jaggery
2 tsp of clarified butter(ghee) or unsalted butter
1 cup of roughly chopped dried fruits.
6-7 Cashew nuts
8 kernels of walnuts
14-15 green Raisins
14-15 black raisins
3 tsp of multi seeds (pumpkin, sesame, watermelon, chia, sunflower)
All should make up to 1 cup of roughly chopped Dry Fruits and Seeds.
Cut butter paper of the size of your baking tray, brush a little bit of butter on it and lay it over a baking tray and put it aside.
Mix rolled oats, all roughly chopped nuts, and seeds together in a mixing bowl.
Pour the above mixture into a pan and dry roast it at a low flame with continuous stirring for 5-7 min or till it gives aroma.
Once it is done, remove it back into the bowl and let it cool. Then add dates and raisins to it.
Then put 2 tsp of clarified butter and add jaggery to it. Let it cook at low temperature and stir it continuously. Once the jaggery becomes liquid, keep checking for bubbling.
Once it starts bubbling, cook it for extra 1 min and pour the mixture in to the above mixture of oats and dried fruits.
Mix it well, so that entire mixture comes together, not like dough but at least clings together.
Pour the mixture in the baking tray and make it even from all side by pressing it hard with some flat surface utensil.
Let it cool for 15-20 min and transfer it to the flat surface and cut into equal bars.
