Quiona Dosa and Uttapam
The quinoa Dosa will be a nice change to our regular dosa. Quinoa is a healthy grain with the right amount of protein, dietary fiber, vitamins, and minerals. It is considered as the best food for diet. Moreover, preparing uttapam/pancakes adding varieties of vegetables makes the recipe more healthy, ideal for everyone including kids. No fermentation is required, thus easy to make.

For batter preparation
Ingredients:
1 cup quinoa
1/4 cup + 2tsp curd
Salt to taste
Water as per requirement.
Preparation method:
Take quinoa in a bowl and wash it twice with clean water to remove its bitterness.

Then soak Quinoa in warm water for 2-3 hours. (If you are planning to make in the morning, then soak it for overnight).

Ingredients:
Quinoa batter
Pepper to taste
Salt to taste
Water as per requirement
Preparation method:
Take batter, add salt, pepper and water to it to get a dosa like consistency.

Quinoa Dosa batter
Put a dosa pan on the low flame and let it heat till your palm feel
Take 1 and 1/4 ladle of batter and quickly spread clockwise in the circular motion. (Take care to move in the same direction).

Let it cook, till it leaves the surface on its own.
Add ghee or oil as per your taste and flip it. Turn the flame to medium-high and let it cook till you get a slight spots.

Serve it with tomato tamarind chutney.
For Uttapam preparation
Ingredients:
Quinoa batter
1/3 cup onion
1/3 cup tomatoes
1/4 cup green bell pepper
1/4 cup yellow bell pepper
1/4 cup green bell pepper
2 crushed green chili
Salt to taste
Pepper to taste
Water as per requirement
Preparation method:
Take quinoa batter in one top, add water to get a uttapam’s batter like consistency.

Quinoa Uttapam batter
Add all chop vegetables, chilies, pepper, salt and mix it well. (You can adjust batter’s consistency after adding vegetables, because it may release water).

Put a flat dosa pan on the low flame and let it heat till your palm feel the

Let it cook till it detaches from the surface, and below surface turns red.
Add some oil or ghee, flip it and cook at medium flame till you get some spots.
Serve it with coconut chutney or tamarind tomato chutney.
