Orange almond cake

This citrus-flavored orange almond cake is one of the favorite desserts among Jewish people. It is prepared using the whole orange with peel, which gives both fruity and slightly bitter taste. I have baked in combination with almond but can also make several varieties using different nuts such as walnuts and pistachios. People, who are fond of citrus and fruity flavors, then the orange almond cake is the best dessert which you should never miss.

Ingredients:

1 cup almond flour

1/2 cup oats flour(If you want flour-free, then add extra 1/2 cup of almond powder instead of oats).

1/2 cup + 2 tsp sugar

3 whole eggs

2 oranges

2 tsp olive oil

Preparation method:

Take water in a pot and bring it to boil. Place 2 oranges along with the peel into it and let it simmer for around 1 hr with a lid on it. (You can check it by pressing them, it will be soft from everywhere.

Let it cool down and cut it into pieces. Carefully remove all seeds because it will leave its bitterness. Then transfer it to the food processor or chopper or mixing bowl. (You can use any as per the availability).

Blend it till you get smooth and pulp like consistency.

Once your orange puree is done, take 3 eggs in a large bowl and add sugar to it.

Beat them till sugar is dissolved and mixture gets fluffy.

Add almond flour, oat flour to the above mixture and mix it well to get a uniform mixture.

Next, add Orange pulp to the above mixture and stir to mix orange pulp well with it.

Transfer the mixture into the greased mold and bake it at 180° c in the preheated oven for around 1 hour. ( The baking time may differ, so better check by inserting a knife in the middle portion of the cake. If it comes clean, your cake is ready.)

Before de-moulding it, let it cool down completely, otherwise, it may fall apart from the middle.

If you want more sweet, you can sprinkle icing sugar on it.
