Spinach Pesto Pasta Recipe

This yummy spinach pesto pasta prepared with Spinach pesto and wheat based white sauce. I have replaced basil with spinach with no added high fat cheese or butter. Made with olive oil, spinach, walnuts, garlic and less quantity of parmesan cheese, this spinach pesto pasta turned out to a healthy pasta, yet kid’s tasty meal. I kept it simple without any addition of vegetables, but if you want healthier, you can add zucchini, broccoli, bell peppers, mushrooms like vegetables to it.

Ingredients

For spinach pesto

2 cups of spinach

8-9 big garlic clove

6 kernel walnut

1/2 tbsp chili flakes

1/2 tbsp mixed herbs(oregano, thymes, rosemary and basil)

1 tbsp of olive oil

Small piece of parmesan cheese

Pepper to taste

Salt to taste

Transfer washed spinach into the pressure cooker and cook it till 2 whistles at medium flame.

In a mixing bowl, add garlic, chili flakes, mixed Italian herbs, parmesan cheese, sprinkle a little salt and pepper to taste. Grind all ingredients to get a coarse paste.

After one mix, add olive oil to it and grind it again.

Once the spinach is boiled and cooled, add boiled spinach in to the above mixture in the same mixing bowl.

Grind it to get a puree like consistency. It will be a grainy pesto with the crunch of walnuts and garlic. You can use it as it is, but if you want smooth pesto, you can try grinding adding leftover pasta water or milk to it.

Pasta preparation

Ingredients:

1 and 1/2 cup pasta

1 tbsp wheat flour

1/4 cup milk

1/2 tsp of chili flakes

Preparation method

For boiling pasta click on the below link.

Take a skillet, add 2 tbsp of olive to it and let it heat at low flame.

Once the oil is done, add 1/2 tsp of chili flakes to it and sauté it.

Add 1 tbsp of wheat flour with continuous stirring so that it doesn’t stick to the bottom of the pan.

Sauté it for 2 minutes or till it converts to slightly brown in color. Then add milk in it with continuous stirring and once the sauce starts thickening, mix entire spinach pesto into it. You can adjust thickness as per your requirement by adding milk or pasta water.

Mix it well, sprinkle salt-pepper to it and transfer boiled pasta to it.

Toss pasta well in sauce, add dash of sugar only if you want and serve hot with parmesan and herbs as a garnishing.
