Quinoa Vegetable Upma made with Quinoa, varieties of vegetables and curd is the healthy alternative breakfast than usual semolina upma. It is tasty, yet nutritious with the only flavor of ginger, garlic, and green chili without any other spices. Very simple and quick to prepare. Addition of curd makes it more healthy and tasty. You can add vegetables of your choice to make it colorful and delicious.

1 cup cooked quinoa (for cooking quinoa, please check this link https://tastymunchy.com/2019/03/16/chickpeas-and-kidney-beans-quinoa-salad/
1/3 cup onion
1/4 cup red bell pepper
1/4 cup yellow bell pepper
1/4 cup green bell pepper
1/3 cup broccoli
1 tbsp Ginger+Garlic+1 green chili paste( You can adjust spiciness as per your requirement by adding more or less chili).
1/3 cup curd (If not using curd, then can replace it with one piece of lemon)
1 tbsp olive oil or vegetable oil
1/2 cup water or as per requirement
Pepper to taste
Salt to taste
Place oil in a skillet and let it heat at low flame (You can use any oil of your choice).
Add onions, ginger+garlic and chili paste to it. Cook them all together until onion gets slightly transparent.
Then add rest all chopped vegetables one by one, sprinkle some salt and let it cook for around 3-4 minutes with lid covered on it.
Once the vegetables are partially cooked that is crunchy and not overcooked, add Quinoa and curd to the above mixture.
Stir it well and if required, add water to it. Mine turned little watery, so I suggest to add water only at the end only if required because quinoa is already cooked and will not absorb additional water.
Sprinkle pepper and salt as per the taste and your nutritious quinoa vegetable upma is ready to serve hot.
