Tomato Basil Penne Pasta
Ready to eat pasta or pasta made with market-ready pasta sauce is not at all healthy. This red sauce pasta is made with home-made pasta sauce and lots of vegetables. Making at home obviously gives more freshness to the dish. It tastes better and a healthier than market one.

For Pasta sauce
250 gms of cherry tomatoes
3 nos of tomatoes(blanched)
8-9 cloves of garlic
2 teaspoon chili flakes
1 medium-sized onion
2 teaspoon of mixed Italian herbs(thyme and oregano).
1/2 teaspoon of chili powder
1 cup water
1/2 cup of Italian Basil
3 teaspoons of olive oil
Salt to taste
Preparation method
Take a pan, add 3 teaspoons of olive oil to it and let it heat at low flame.
Once the oil is heated, add chili flakes, garlic to it and sauté it. Garlic should not be burned.
Then add herbs, chopped onions and cook till it becomes translucent.
Next put cherry tomatoes(cut into half) to it, add a pinch of salt and sauté properly. Add a little bit of water and let it cook for 10 min with lid on it.
Once you see that tomatoes have softened enough, add salt, chili powder, tomato pulp, basil, and salt. Stir it and cover the lid to reduce the sauce till all tomatoes are cooked and quantity of sauce comes down to half.
Once it is done, let it cool down and put the entire sauce into a mixture to make a smooth even paste.
For tomato pulp, take tomatoes, make a cross on the top of tomatoes and transfer it in a boiling water for 7-10 min or till the tomatoes peel come out. Peel the tomatoes and grind it in the grinder machine. Your tomato pulp is ready.
For Pasta preparation
Ingredients:
2 & 1/2 cup Penne Pasta
1/3 cup green bell pepper
1/3 cup red bell pepper
1/3 cup yellow bell pepper
1/3 cup yellow zucchini
1/3 cup green Zucchini
1/4 cup olives
3 teaspoons of olive oil
1& 1/2 teaspoons of chili flakes(You can add as per your taste)
1 teaspoon of Italian mix
Parmesan, Basil and flat Parsley for garnishing.
Preparation method:
How to cook penne pasta
Take one pot and fill 3/4 of water in it. Put salt to taste and 1 small teaspoon of oil. Let it bubble.
Once it comes to boiling temperature, add pasta to it and stir it in middle.
After 7-8 min, check for al dente texture(which means firm on a bite, but soft enough to touch)
If your sauce and veggies are not yet ready for taking pasta, Then wash pasta with cold water to stop its cooking and toss it with a little bit of oil.
Pasta preparation:
Put a pan on low flame and add 3 teaspoons of olive oil to it.
Add chopped garlic and chili flakes and saute it till it becomes light brown. (Be careful not to burn Garlic).
Add Italian mix and all veggies to the pan and mix it well. Sprinkle a little bit of salt to the vegetables for fast cooking.
Cover the lid and let it cook till the vegetable softens (Don’t overcook vegetables)
Once you feel that vegetables are about to cook, add pasta sauce, salt to taste and crush some pepper powder to it.
Mix it well and transfer it to the serving plate.
Add olives, grate some parmesan cheese and garnish it with Basil and Parsley.
