It’s a wedding season in India and I have just come back from my cousin’s marriage. For whole one week, I munched on a lot of unhealthy and heavy oily food. So after a long wedding week, I think of making a fresh and healthy salad which helps to detox my body. This recipe is prepared with lots of exotic vegetables and honey based dressing. It is healthy and tasty and can be eaten every day. This vegetable salad is also best for dieting because of lower in calories and fats and higher in nutrients like vitamins, iron, minerals, etc. If you are on diet, you can exclude honey from the seasoning, because it contains a lot of calories.

Ingredients for Salad seasoning:
1 tsp honey
1/2 tsp pepper powder
1/2 tsp chili flakes
2 tsp extra virgin olive oil
Salt to taste
Ingredients for Salad:
1/3 cup Green bell pepper
1/3 cup Yellow bell pepper
1/3 cup Red bell pepper
1/4 cup yellow zucchini
1/4 cup green zucchini
1/3 cup big broccoli floret
1/4 cup cherry tomatoes or normal tomatoes.
1 cup lettuce
1 tsp olives
Feta cheese as per your taste.
1 boiled eggs(optional)
First of all, put 5-6 floret of broccoli for boiling till it gets a little bit soft.(Do not over boil it).
Next chopped all vegetables in dice and add it in the salad bowl. Then add lettuce roughly torn with hands and olives to it.
Once Broccoli is boiled, add it too into the bowl.
Next prepare salad dressing in another small bowl by adding all ingredients mentioned under Salad Seasoning.
Mix it well and drizzle it on the vegetables.
Take feta cheese, break 6-7 small chunks of it with hand and spread it on the salad.
If you are non-vegetarian and like boiled eggs, then you can also add boiled egg to it.
Toss everything together, so that all vegetables takes seasoning equally.
