Pineapple Lapsi Recipe
Lapsi is an Indian traditional dessert prepared with cracked wheat, cinnamon, saffron and sugar. The addition of pineapple adds a fruity twist to the dish. Normally, you can go for only pineapple puree, but in this pineapple Lapsi recipe, I have used a mixture of pineapple pieces and puree. This sweet and tangy dessert zinged with cinnamon and saffron is worth trying.

Ingredients
3/4 cup small cracked wheat
1/3 cup pineapple pieces
3/4 cup pineapple puree
4 tbsp clarified butter/ghee
1/3 cup+6tbsp sugar
1/2 tsp cinnamon powder
Dry fruits for garnishing.
Water as per requirement

How to make Pineapple Lapsi?
Take ghee in a pan and add cracked wheat into it.
Continuously stir the mixture and roast till it turns slightly brown.
Once it is done, transfer it to a bowl and keep it aside.

Finely chop the pineapple.

Keep 1/4 as pieces and turn 3/4 into a puree.

Take the same pan, transfer pineapple pieces and puree into it.

Add sugar and cook the mixture till it melts and pineapple softens.

Next, add 2 cups water and transfer roasted cracked wheat into it.

Let it simmer with intermittent stirring till water evaporates and broken wheat cooks well.

Sprinkle cardamom, dry fruits and mix well. Enjoy hot tangy and sweet Pineapple Lapsi.
